Can we talk about a super yummy chicken salad? So, my husband and I had a “cook off” to see who could make a better chicken salad. Well, I totally won. First off, he literally put chicken and mayo together and called it chicken salad. I on the other hand, dug through my cabinets, my fruit bowl and fridge to show off and my concoction came out super yummy. So yummy that I am in fact having this for lunch!
Collect your ingredients! I had a rotisserie chicken (it had a coupon for $1 off it so you know I had to buy it) mayo, Craisins (i have so many of them when they were free at Stop & Shop awhile back), apple, red onion, sliced almonds and grapes.
Shred your chicken. I saw on Pinterest that the easiest way to shred chicken was to use your hand mixer and it works pretty well! It beats the old 2 fork method that’s for sure!
Chop up all of your ingredients in to bite size pieces (that includes cutting the grapes in half) and add it to the bowl. Do not forget to add salt and pepper!
Mix it all together and give it a taste test to make sure it is all fine and dandy.
I toasted whole wheat bread and added some green lettuce then put a nice big ole scoop of chicken salad on it! Feel free to add tomatoes. I just cannot stand them! Enjoy!
