I am always trying to make meals that are quick, easy and totally yummy and this one fits the bill! I love to cook from my stockpile and come up with recipes that are cheap by combining whatever I have got to create a healthy meal for my family. This one was a BIG hit. Even with my husband looking over my shoulder in the kitchen scowling about what I was putting in it, when it was all done, he had 3 bowls! (Don’t let me fool you, he was ready to eat this by step 2) This is a keeper for sure. Did I mention that it is one pot so clean up is an absolute breeze? Get your stovetop ready………….
Cook a pound a half of ground beef with a large onion. Dont forget to salt and pepper your meat! Cook until the meat is browned.
Then, add 2 (or 3 or 4) gloves of garlic chopped up and stir around for about 30 seconds to a minute.
Drop a can of diced tomatoes (juice and all!) in to your meat, with 8 ounces of pasta (I used Orzo) along with a half cup of beef stock (chicken works too if thats all you have on hand) and a half cup of water. I added about a teaspoon of Italian seasoning as well.
Stir it all together and bring it up to a simmer. (Medium-low heat works well) Cover your pot and let it simmer for about 10 minutes. Check it every few minutes and give it a stir just to make sure your pasta isn’t sticking to the bottom of the pot.
Once your pasta is cooked, add in spinach. You can use fresh if you like but I have bags of the frozen stuff so frozen it is! I used 1 bag of frozen chopped spinach. Stir it together until the spinach is heated through. Take a spoon and taste test at this point. You will probably need a bit more salt and pepper.
Grate fresh Parmesan cheese all over the top and serve and enjoy! Thats it! Easy right?!
