This has to be one of my favorite recipes. It is a one pan dinner so there is very little clean up and it tastes like a gourmet meal. This is both husband and child approved as well! The sauce is oh so yummy and creamy. My mouth is watering just talking about it. Did i mention I just had to stop typing and go to the store and buy basil (without a coupon!!!!) so i can make this. That is how good this is! And, this is a super easy too!
I started off with chicken breasts and just cut them in half so they were a bit smaller and quicker to cook. Make sure to salt and pepper both sides of the chicken before moving on to the next step.
I had a bowl of milk and another of bread crumbs (I make my own by just putting day old bread in food processor. I add garlic powder and some shredded Parmesan cheese but the stuff you buy at the store will work just fine!)
Add butter and oil (the butter gives the flavor and the olive oil raises the burning point. Butter burns quickly so with adding oil, it won’t burn) and melt together in a large pan.
Add the chicken and brown on each side. About 5-7 minutes on the first side and 3-4 minutes on the second side.
Once the chicken is browned on both sides, remove it from the pan and place on a plate.
Add the cream and can of pimento peppers
Then add the basil and simmer for 2-3 minutes until the sauce starts to thicken and bubble.
Add the chicken back to the pan and toss with the sauce. Cook for another 2-3 minutes until the chicken is warmed back up.
Cover the chicken with the snow of shredded Parmesan cheese. Serve and Enjoy 🙂
