So, I don’t have to tell you that everything is better with bacon right?! If you don’t like bacon (how could you not?!) then this is not the recipe for you. But, I assume that everyone in whole wide world loves bacon so that means you must try this recipe. I am giving you fair warning now- this recipe is addicting. Everyone (including the kids) will go back for seconds (and thirds). And, your friends will text you every single day until you give them the recipe. Not only is it really that amazing, it is also super easy! It uses a rotisserie chicken that you can pick up from your local grocery store and everything cooks in 1 pan. And, it has a creamy garlic ricotta sauce that is absolutely to die for! Lets get cookin’….
Heat up a pan on medium-high heat and slice your bacon in to small pieces. Cook the bacon until it is browned and crunchy.Heat up a big pot on another burner filled with water and boil pasta (I used penne)
Remove he bacon from the pan and put on a plate lined with paper towels to drain off the excess fat/oil.
Dice up a large onion and cook it in the bacon fat along with the cloves of minced garlic. I suggest cooking these at medium-low heat so the garlic doesn’t burn. If it burns, it turns bitter.
Add the mushrooms to the onions and a sprinkle of thyme, salt and pepper. Saute until the mushrooms are cooked and browned.
Pull the chicken off of the bone and shred it. Add it to the mushrooms and onions to heat through. Then add the cup of half and half and ricotta. Stir it all together so it is all bubbly and hot!
